Ingredients
- 2 tbsp extra virgin olive oil
- 6 oz pancetta
- 1 cup finely chopped yellow onion
- 2 tsp minced garlic
- 1 can (28 oz) san marzano tomatoes
- 1/3 cup dry white wine
- salt
- 1/4 tsp red pepper flakes (optional)
- 16 oz dry bucatini pasta
- 3/4 cup finely shredded pecorino romano cheese
- 2 tbsp minced parsley (optional)
Steps
- Heat the oil in a large skillet over medium heat, then cook the pancetta for 6 minutes until crisp.
- Add the onion and garlic, and cook for 5 minutes.
- Stir in the tomatoes, wine, salt, and red pepper flakes, then simmer for 15 minutes.
- Boil the bucatini in a large pot of salted water until tender, then drain it.
- Toss the pasta with the sauce and pecorino, then stir in the parsley.
