Ingredients
- 16 oz potato gnocchi
- 4 oz pancetta or thick-cut bacon
- 2 large eggs
- 1/2 cup freshly grated pecorino romano
- 1 clove garlic
- salt and black pepper (optional)
- 1 tbsp chopped fresh parsley
Steps
- Boil a large pot of salted water and cook the gnocchi until tender, following the package timing.
- Cook the pancetta and garlic in a large skillet over medium heat for 5 to 7 minutes, until crisp.
- Whisk the eggs and pecorino together in a bowl.
- Drain the gnocchi, reserving 1/2 cup cooking water.
- Toss the hot gnocchi with the pancetta in the skillet, then remove the skillet from the heat.
- Stir in the egg mixture and enough cooking water to coat the gnocchi, then cook over low heat until the eggs are firm.
- Stir in the parsley and season with salt and pepper if needed.
