Ingredients
- 1 lb penne
- 2 tbsp butter
- 4 cloves garlic
- 4 oz pancetta
- 1/3 cup vodka
- 28 oz whole italian tomatoes
- 1/2 tsp red pepper flakes
- 2/3 cup heavy whipping cream
- 3/4 cup grated parmesan cheese
- 3 tbsp chopped fresh parsley
Steps
- Boil the penne in a large pot of salted water until tender, then drain.
- Cook the pancetta in a large skillet over medium heat for 5 minutes until browned.
- Add the butter and garlic, and cook for 1 minute.
- Stir in the vodka and cook for 3 minutes until slightly reduced.
- Add the tomatoes and red pepper flakes, and simmer for 8 minutes.
- Stir in the cream, cooked penne, and Parmesan, and cook for 3 minutes until hot.
- Fold in the parsley and serve.
