Ingredients

  • 1/2 lb spaghetti
  • 4 oz pancetta or bacon
  • 2 cloves garlic
  • 1 pinch ground black pepper
  • 1 egg
  • 1/4 cup parmigiano reggiano cheese
  • 1/4 cup fresh parsley (optional)

Steps

  1. Boil a large pot of salted water and cook the spaghetti until tender, about 8 to 10 minutes.
  2. Cook the pancetta and garlic in a large skillet over medium heat for 6 to 8 minutes until the pancetta is crisp.
  3. Whisk the egg, Parmesan, and black pepper in a bowl.
  4. Drain the spaghetti, reserving 1/2 cup cooking water, and add the pasta to the skillet.
  5. Remove the skillet from the heat, stir in the egg mixture and enough cooking water to coat the pasta, then return it to low heat for 2 to 3 minutes until the egg is firm.
