Ingredients
- 1 3/4 cup all-purpose flour
- 2 tbsp white granulated sugar
- 2 tsp baking soda
- 1 1/2 tsp cream of tartar
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp vanilla extract
- 2 cups buttermilk
- 4 eggs
- 1/4 cup butter (optional)
- 1 cup frozen blueberries
Steps
- Whisk the flour, sugar, baking soda, cream of tartar, salt, cinnamon, and nutmeg in a large bowl.
- Whisk the vanilla, buttermilk, and eggs in a second bowl, then stir them into the dry ingredients until just combined.
- Rest the batter for 10 minutes while the baking soda activates.
- Fold in the frozen blueberries without overmixing.
- Heat a large skillet over medium heat and melt a little butter in it, if using.
- Cook quarter-cup portions for 2 to 3 minutes per side until browned and cooked through.
- Keep the pancakes warm in a 200 F oven while cooking the remaining batter.
