Ingredients
- 1/2 cup unsalted butter
- 2/3 cup granulated sugar
- 2 large eggs
- 1 cup mashed banana
- 1 tsp vanilla extract
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups fresh or frozen blueberries
- 1 tbsp flour
- 1 1/2 tbsp coarse sugar (optional)
Steps
- Heat the oven to 375 F and grease a 12-cup muffin pan with cooking oil.
- Beat the butter and sugar until smooth, then mix in the eggs, banana, and vanilla.
- Whisk the flour, baking soda, baking powder, and salt in a separate bowl.
- Fold the dry mixture into the banana mixture, then gently fold in the blueberries.
- Divide the batter among the muffin cups and sprinkle with coarse sugar.
