Ingredients
- 1 1/2 tbsp vegetable oil
- 1 lb ground beef
- 1/3 cup white onion
- 2 cloves garlic
- 1 serrano pepper
- 1 1/2 cup diced potato
- 1 lb tomatoes
- 1 knorr® beef bouillon cube
- 1/3 cup chopped cilantro
- salt and pepper to taste (optional)
Steps
- Heat the oil in a 12-inch skillet over medium heat and cook the onion, garlic, and serrano pepper for 3 minutes.
- Add the ground beef and cook for 7 minutes, breaking it apart until it reaches 160 F.
- Stir in the potatoes and cook for 3 minutes to coat them with the beef mixture.
- Add the tomatoes, bouillon cube, and 1/3 cup water, then bring the mixture to a simmer.
- Cover and cook for 15 minutes, stirring twice, until the potatoes are tender.
- Stir in the cilantro and season with salt and pepper before removing the skillet from the heat.
