Ingredients
- 500 g beef
- 1 large aubergine
- 150 g greek yogurt
- 1 beaten egg
- 3 tbsp parmesan
- 400 g tomato
- 4 tbsp tomato puree
- 350 g potatoes
Steps
- Heat the oven to 425 F and slice the potatoes and aubergine into thin rounds.
- Arrange the vegetables on an oiled baking sheet and roast for 12 minutes.
- Cook the beef in a skillet over medium-high heat until browned, then stir in the tomato, tomato puree, salt, and pepper.
- Simmer the beef sauce for 10 minutes, until the beef reaches 160 F.
- Mix the yogurt, beaten egg, and Parmesan in a bowl.
- Layer the potatoes, aubergine, and beef sauce in a baking dish, spread the yogurt mixture on top, and bake for 15 minutes until the egg is firm.
