Ingredients
- 1 lb asparagus
- 3/4 cup gluten-free breadcrumbs
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/4 tsp pepper
- zest from 1/2 a lemon
- juice from 1/2 a lemon
- 2 tbsp unsweetened plain coconut yogurt
- 1 tbsp dijon mustard
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- salt & pepper
Steps
- Heat the oven to 425 F and line a baking sheet with oil.
- Trim the asparagus and toss it with olive oil.
- Mix the breadcrumbs, salt, garlic powder, pepper, and lemon zest in a shallow dish.
- Coat the asparagus with the breadcrumb mixture and place it on the baking sheet.
- Bake for 12 to 15 minutes until crisp and tender.
- Stir the coconut yogurt, mustard, lemon juice, salt, and pepper together for dipping.
