Ingredients
- 2 10- ounce thick tenderloin beef filets
- 2 slices regular-cut pork bacon
- salt and pepper to taste (optional)
- vegetable or canola oil
- 1/2 stick butter
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh tarragon
- 1/2 tbsp minced garlic
Steps
- Heat the oven to 450 F and wrap one bacon slice around each filet.
- Season the filets with salt and pepper, then secure the bacon with a toothpick if needed.
- Heat a little oil in an oven-safe skillet over medium-high heat and sear the filets for 2 minutes per side.
- Add the butter, rosemary, tarragon, and garlic to the skillet, then spoon the melted butter over the filets.
- Bake for 8 to 10 minutes, until the beef reaches 145 F, then rest for 3 minutes.
