1 tbsp honey mustard

1/4 cup sharp cheddar cheese (optional)
2 tbsp chives (optional)

Steps

Cook the bacon in a skillet over medium heat for 6 to 8 minutes, then drain and crumble it.
Halve the hard-boiled eggs lengthwise and remove the yolks.
Mash the yolks, mayonnaise, honey mustard, vinegar, salt, and pepper in a bowl.
Stir in half the bacon, cheddar, and chives.
Spoon the filling into the egg white halves and top with the remaining bacon, cheese, chives, smoked paprika, and toasted panko.
