Ingredients
- 8 oz can chickpeas
- 8 large medjool dates
- 1/3 cup unsweetened apple sauce
- 1/2 cup nut butter
- 1/4 cup old-fashioned oats
- 1 tbsp cinnamon
- 2 tbsp ground flaxseed
- 2 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
- 1 apple
Steps
- Heat the oven to 350 F.
- Drain and rinse the chickpeas, remove pits from the dates, and core the apple.
- Blend chickpeas, dates, applesauce, nut butter, oats, cinnamon, flaxseed, vanilla, baking powder, and salt until smooth.
- Chop the apple and fold it into the dough.
- Scoop 16 portions onto a greased baking sheet and flatten them.
- Bake for 12 minutes, then cool the cookies for 5 minutes.
