2 tsp oil
1 lb bone-in pork chops
1 tsp thyme
1/4 tsp salt
1/4 tsp ground black pepper
1 tbsp salted butter
1 onion
1 lb red cabbage
1 sweet baking apple
2 cup pure apple cider
2 tbsp apple cider vinegar
2 tsp prepared mustard

Steps

Heat the oven to 325 F.
Season the pork chops with thyme, salt, and pepper, then sear them in oil in a large oven-safe skillet for 3 minutes per side.
Transfer the chops to a plate and cook the sliced onion in the skillet for 4 minutes.
Add the sliced cabbage and apple, then cook for 5 minutes while stirring.
Stir in the cider, vinegar, mustard, and butter, then return the pork to the skillet.
Cover and bake for 55 to 60 minutes, until the cabbage is tender and the pork reaches 145 F.
