4 whole bone-in pork chops
1 3/4 tsp ground cinnamon
to taste kosher salt & ground pepper (optional)
3 tbsp unsalted butter
1 yellow onion
2 tbsp light brown sugar
1/8 tsp allspice
1 cup apple cider
2 tsp apple cider vinegar
1 tbsp fresh thyme leaves (optional)

Steps

Season the pork chops with salt, pepper, and 1 teaspoon cinnamon.
Melt 1 tablespoon butter in a large skillet over medium-high heat and brown the chops for 3 minutes per side.
Transfer the chops to a plate and melt the remaining butter in the skillet.
Cook the sliced apples and onion for 5 minutes, stirring often.
Add the brown sugar, remaining cinnamon, allspice, cider, vinegar, and thyme, then simmer for 5 minutes.
