Ingredients
- 2 cups almonds
- 3 egg
- 1 1/4 cup granulated sugar
- 2 tblsp flour
- 1 tsp baking powder
- 5 egg yolks
- 1/2 cup heavy cream
- 1/3 cup granulated sugar
- 1 tsp vanilla extract
- 100 g butter
Steps
- Heat the oven to 350 F and grease a 9-inch round cake pan with cooking oil.
- Grind the almonds, then mix them with 1 cup sugar, flour, and baking powder.
- Separate three eggs, beat the whites until firm, and fold them into the almond mixture.
- Spread the batter in the pan and bake for 25 minutes, then cool for 10 minutes.
- Whisk the egg yolks, cream, remaining sugar, and vanilla in a small saucepan over low heat for 6 to 8 minutes.
- Stir in the butter until smooth, spread the custard over the cooled cake, and chill for 5 minutes.
