Ingredients
- 4 boneless skinless chicken breast halves
- 1 large egg
- 1 cup crushed butter-flavored crackers
- 3/4 tsp salt
- 1/2 lb fresh mushrooms
- 2 tbsp butter
- 4 slices deli ham or thinly sliced hard salami
- 4 slices swiss cheese
Steps
- Pound the chicken breasts to 1/2-inch thickness, then season them with salt.
- Beat the egg in a shallow bowl and place the crushed crackers in another shallow bowl.
- Dip each chicken breast in the egg, coat it with crackers, and press the coating firmly into place.
- Melt the butter in a large skillet over medium heat and cook the chicken for 4 minutes per side, until it reaches 165 F.
- Add the mushrooms around the chicken and cook for 3 minutes.
- Top each chicken breast with ham and Swiss cheese, cover the skillet, and cook for 2 minutes until the cheese melts.
