Ingredients
- 1 cup unbleached all-purpose flour
- 2 tsp granulated sugar
- 1/4 tsp salt
- 8 tbsp unsalted butter
- 4 tbsp ice water
- 1 1/2 lb sweet potatoes
- 6 tbsp salted butter
- 1 can (5 oz) evaporated milk
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1 tsp vanilla extract
Steps
- Heat the oven to 400 F, bake the sweet potatoes for 50 minutes, and cool them for 20 minutes.
- Mix the flour, granulated sugar, salt, and 8 tablespoons butter, then add the ice water and form a dough.
- Chill the dough for 30 minutes, roll it into a 9-inch pie pan, and press it into place.
- Scoop the sweet potato flesh into a bowl and beat in the salted butter, evaporated milk, brown sugar, eggs, cinnamon, nutmeg, ginger, salt, and vanilla.
- Pour the filling into the crust and bake at 350 F for 55 minutes, until the center is firm.
- Cool the pie for 70 minutes before cutting.
