Ingredients
- 2 tbsp olive oil
- 2 cups sweet potato
- 1/2 yellow onion
- 1 cans (14 oz) black beans
- 4 cups tightly packed kale leaves
- 9 eggs
- 1/2 tsp turmeric
- 1 tsp ground cumin
- 1 tsp garlic powder
- salt to taste (optional)
Steps
- Heat the olive oil in a large skillet over medium-high heat, then cook the diced sweet potato and onion for 7 minutes.
- Stir in the black beans, kale, turmeric, cumin, garlic powder, salt, and pepper, then cook for 3 minutes.
- Push the vegetables to one side, add the eggs, and scramble them until firm and fully cooked, about 4 minutes.
- Fill the kale leaves with the sweet potato mixture and serve them as tacos.
