Ingredients
- 10 oz gluten-free pasta
- 3 oz sun-dried tomatoes
- 1/4 cup extra virgin olive oil
- 1 cup fresh basil (optional)
- 3 cloves garlic
- 2 tbsp vegan parmesan cheese
Steps
- Boil a large pot of salted water and cook the pasta according to its package directions until tender.
- Blend the sun-dried tomatoes, olive oil, garlic, basil, and vegan Parmesan until mostly smooth.
- Reserve 1/2 cup of pasta water, then drain the pasta.
- Toss the hot pasta with the tomato pesto, adding pasta water a little at a time until coated.
- Cook the mixture in a large skillet over medium heat for 2 minutes, then season with salt and pepper.
