- 3 cups sliced fresh or frozen rhubarb
- 1 quart fresh strawberries
- 2 tbsp lemon juice
- 1 cup sugar
- 1/3 cup cornstarch
- 3 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup butter
- 3/4 cups buttermilk
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup butter
- 3/4 cup all-purpose flour
- 3/4 cup sugar
Steps
- Heat the oven to 350 F and grease a 9-by-13-inch baking pan with cooking oil.
- Stir strawberries, rhubarb, lemon juice, one cup sugar, and cornstarch in a large bowl.
- Whisk flour, one cup sugar, baking powder, baking soda, and salt in another bowl.
- Beat one cup butter, buttermilk, eggs, and vanilla into the dry mixture, then spread the batter in the pan.
- Spoon the fruit mixture over the batter, and rub the remaining butter, flour, and sugar together before sprinkling it on top.
- Bake for 48 to 52 minutes, then cool the cake in the pan for 15 minutes.
