Ingredients
- 1/2 cup unsalted butter
- 3/4 cups sugar
- 3 large eggs
- 3/4 tsp vanilla extract
- 3/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup 2% milk
- 1 cup finely chopped fresh strawberries
- 1 cup confectioners' sugar
- 2 tsp 2% milk
- 1 tsp lemon juice
- 3/4 cup finely chopped fresh strawberries
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with butter.
- Beat the butter and sugar until creamy, then beat in the eggs and vanilla.
- Whisk the flour, baking powder, and salt, then add them alternately with the milk to the butter mixture.
- Fold in 1 cup chopped strawberries, spread the batter in the pan, and bake for 50 to 55 minutes.
- Cool the cake in the pan for 15 minutes, then remove it and cool it completely.
- Whisk the confectioners’ sugar, 2 teaspoons milk, and lemon juice, then drizzle the glaze over the cake and scatter the remaining strawberries on top.
