Ingredients
- 1 clove garlic
- 1/3 cup ricotta cheese
- 1/4 cup frozen chopped spinach
- 2 tbsp grated parmesan cheese
- 1 tsp sea salt and cracked pepper (optional)
- 2 tsp dried italian mixed herbs
- 1/4 cup grated light mozzarella cheese
- 4 slices thick sourdough bread
- 1 tbsp butter
- 1/2 cup your favourite pasta sauce
Steps
- Mix the ricotta, spinach, parmesan, herbs, salt, pepper, and garlic in a small bowl.
- Spread the mixture over two bread slices, then add the mozzarella and top with the remaining bread.
- Melt the butter in a skillet over medium-low heat.
- Cook the sandwiches for 3 to 4 minutes per side until golden and the cheese melts.
- Warm the pasta sauce in a small pan over low heat for 3 minutes, then serve it with the sandwiches.
