Ingredients
- olive oil spray
- 1 shallot
- 3 cloves garlic
- kosher salt (optional)
- 1 bags (6 oz) fresh baby spinach
- 1 11 ounce baguette
- 1 cans (14 oz) artichoke hearts
- 1/2 cup light cream cheese
- 1 pinch red pepper flakes (optional)
- 1 1 1/2 ounce piece of parmigiano reggiano
Steps
- Heat the oven to 425 F and spray a large baking sheet with oil.
- Slice the baguette into 16 pieces and arrange them on the baking sheet.
- Cook the shallot and garlic in a large skillet over medium heat for 3 minutes, then add the spinach and cook for 2 minutes.
- Stir in the chopped artichokes, cream cheese, red pepper flakes, and salt if using.
- Spread the mixture over the bread and sprinkle with grated Parmesan.
- Bake for 8 to 10 minutes until the bread is crisp and the topping is hot.
