Ingredients
- 450 g carrots
- 1 large orange
- 1/5 cup cilantro leaf
- 1/5 cup mint leaf
- 2 tbsp orange juice
- 1 tbsp lemon juice
- 2 tbsp extra virgin olive oil
- 1/2 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1 tsp icing sugar
- sea salt
- fresh ground black pepper
Steps
- Peel and grate the carrots into a large bowl.
- Peel the orange, cut away its pith, and chop the segments over the bowl.
- Whisk the orange juice, lemon juice, olive oil, cumin, cinnamon, icing sugar, salt, and pepper together.
- Pour the dressing over the carrots and orange, then toss well.
- Chop the cilantro and mint, fold them into the salad, and rest it for 5 minutes.
