Ingredients
- 5 potatoes
- 12 oz carrots
- 1 scallions
- 2 cloves garlic
- 1 slice bread
- 1 garlic powder
- 2 soy sauce
- 1 ground beef
- 1 tsp vegetable oil
- 2 tsp sugar
- 2 tbsp butter
Steps
- Heat the oven to 425 F and place the carrots on a baking sheet with oil.
- Mix the beef, bread, scallion, garlic, garlic powder, one tablespoon soy sauce, sugar, salt, and pepper in a bowl.
- Shape the mixture into four small loaves, place them beside the carrots, and roast for 20 minutes.
- Brush the loaves with the remaining soy sauce and roast for 5 minutes more, until they reach 160 F.
- Boil the potatoes in salted water for 15 minutes, then drain and mash with butter and a little water.
- Serve the meatloaves with the roasted carrots and mashed potatoes.
