Ingredients
- 1 1/2 cups ripe bananas
- 1/4 cup sourdough discard
- 1 1/8 cups unbleached all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 tbsp unsalted butter
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 large egg white
- 1 tsp vanilla extract

Steps
- Heat the oven to 350 F, spray a 9-by-5-inch loaf pan, and line it with parchment paper.
- Melt the butter, then whisk it with the bananas, sourdough discard, brown sugar, egg, egg white, and vanilla.
- Whisk the flour, baking soda, baking powder, and salt in a separate bowl.
- Stir the dry mixture into the banana mixture just until combined.
- Pour the batter into the pan and bake for 50 minutes, until the center is set.
- Cool the bread in the pan for 15 minutes before slicing.
