Ingredients
- 1 1/4 cups buttermilk
- 1 1/2 cups all-purpose flour
- 1 tbsp granulated sugar
- 1 tsp baking soda
- 1/4 tsp salt
- 3 tbsp unsalted butter
- 2 large eggs
- 1 tsp vanilla extract
- 2 bananas
- 2 tbsp olive oil
Steps
- Mash the bananas in a large bowl, then whisk in the buttermilk, eggs, and vanilla.
- Melt 2 tablespoons butter and stir it into the banana mixture.
- Whisk the flour, sugar, baking soda, and salt in a second bowl, then gently stir the dry mixture into the wet mixture.
- Heat a lightly oiled skillet or griddle over medium heat and melt the remaining butter.
- Pour about 1/4 cup batter for each pancake and cook for 2 to 3 minutes, until bubbles form.
- Flip the pancakes and cook for 1 to 2 minutes, until browned and cooked through.
