Ingredients
- 32 oz gnocchi
- 1 large shallot
- 6 oz broccoli florets
- 1/2 cup extra-virgin olive oil
- 3/4 tsp sea salt
- 1/4 cup loosely packed fresh basil leaves (optional)
- 1 clove garlic
- 1/2 cup freshly grated parmesan cheese
- red pepper flakes (optional)
Steps
- Heat the oven to 425 F and line a large rimmed sheet pan with the gnocchi, shallot, and broccoli.
- Toss the vegetables and gnocchi with 2 tablespoons olive oil and 1/2 teaspoon salt.
- Roast for 20 to 25 minutes, stirring once, until the gnocchi is golden and the broccoli is tender.
- Blend the remaining olive oil, roasted broccoli, basil, garlic, Parmesan, red pepper flakes, and remaining salt until mostly smooth.
- Toss the hot gnocchi and shallot with the broccoli pesto and serve warm.
