Ingredients
- 4 slices bread
- 1 1/2 tbsp finely ground oats
- 1 tbsp finely ground flax seed
- 1 tbsp raw sugar or maple syrup
- 1/4 tsp vanilla extract
- 1/3 cup warm water
- 1 1/2 tsp organic canola or coconut oil
- 4 1/2 dates soaked in water for atleast 15 minutes
- 1 tbsp agave or maple syrup
- 1 tbsp water
- 1/4 cup or as needed shredded dried coconut (optional)
Steps
- Mash the soaked dates with 1 tablespoon water and agave or maple syrup until mostly smooth.
- Whisk the oats, flaxseed, sugar or maple syrup, vanilla, and warm water in a shallow bowl.
- Dip each bread slice into the mixture, coating both sides.
- Heat the oil in a large skillet over medium heat and cook the bread for 3 minutes per side.
- Top the cooked French toast with the date mixture and shredded coconut.
