- 2 lb fresh green beans
- 2 tbsp extra-virgin olive oil
- 3 cloves garlic
- 1 1/4 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1/4 tsp sugar
- 1 tsp lemon zest
- 2 tsp lemon juice
- 1/2 cup dried cranberries
- 1/2 cup walnuts
Steps
- Heat the oven to 425 F.
- Toss the green beans with olive oil, garlic, salt, pepper, and sugar on a large rimmed baking sheet.
- Roast for 20 minutes, stirring halfway through.
- Add the walnuts and roast for 5 more minutes.
- Toss the hot beans with lemon zest, lemon juice, and dried cranberries.
