Ingredients
- 3/4 cup ricotta cheese
- 3 large eggs
- 3 tbsp caster sugar
- 3/4 cup milk
- 1/2 tsp vanilla extract
- 1 tsp white vinegar
- 1 1/3 cups plain/all-purpose flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1 pinch salt
- 1 tbsp butter
- 8 oz / 250g strawberries
- 1 tbsp caster/superfine sugar
- maple syrup
Steps
- Stir the strawberries with one tablespoon sugar and set them aside for 15 minutes.
- Whisk the ricotta, eggs, caster sugar, milk, vanilla, and vinegar in a large bowl.
- Whisk the flour, baking powder, baking soda, and salt in a second bowl, then stir them into the ricotta mixture.
- Heat a lightly buttered large skillet over medium heat.
- Cook quarter-cup portions for 2 to 3 minutes per side, until golden and cooked through.
- Top the pancakes with the strawberries and maple syrup.
