Ingredients
- 2 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 1 1/2 cups granulated sugar
- 1 cup milk
- 1/2 cup unsalted butter
- 1 1/2 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1 large egg
- 3 cups chopped fresh rhubarb
- 2 tbsp granulated sugar
- 1/4 tsp cinnamon
Steps
- Heat the oven to 350 F and grease a 9-by-13-inch baking pan with butter.
- Whisk the flour, salt, and baking soda in a medium bowl.
- Beat the butter and 1 1/2 cups sugar until smooth, then beat in the egg, vanilla, milk, and lemon juice.
- Stir the dry mixture into the wet mixture until just combined, then spread the batter in the pan.
- Toss the rhubarb with 2 tablespoons sugar and cinnamon, then scatter it over the batter.
- Bake for 45 to 50 minutes, until the center is firm and a toothpick comes out clean.
