Ingredients
- 1 1/2 lb 90/10 ground beef
- 1 yellow onion
- 1 jalapeño
- 3 cloves garlic
- 2 1/2 cups shredded cheese
- 3/4 cup sour cream (optional)
- 2 tbsp taco seasoning
- 10 corn tortillas
- 1 can (19 oz) mild red enchilada sauce
- finely chopped cilantro (optional)
Steps
- Heat the oven to 375 F and lightly oil a 9-by-13-inch baking dish.
- Cook the beef, onion, and jalapeño in a large skillet over medium heat for 8 minutes.
- Add the garlic and taco seasoning, then cook for 2 minutes until the beef reaches 160 F.
- Spread 1/2 cup enchilada sauce in the baking dish and warm the tortillas in a dry skillet for 30 seconds per side.
- Fill each tortilla with beef and some cheese, roll it tightly, and place it seam-side down in the dish.
- Pour the remaining sauce over the tortillas, cover with the remaining cheese, and bake for 20 minutes.
