Ingredients
- 8 oz cream cheese
- 14 graham cracker sheets
- 3 tbsp seedless raspberry jam
- 3 tbsp powdered sugar
- 1/4 cup white chocolate chips
- 1/2 tsp raspberry or vanilla extract
- 7 drops red food coloring
- 1 3/4 cup milk chocolate chips or white chocolate chips
- 1 1/2 tbsp vegetable shortening
- 2 graham cracker sheets (optional)
Steps
- Crush the graham cracker sheets into fine crumbs and reserve 2 tablespoons for rolling.
- Mix the cream cheese, jam, powdered sugar, white chocolate chips, extract, and food coloring until blended.
- Stir in the graham crumbs, cover the mixture, and chill it for 30 minutes.
- Roll the mixture into 22 small balls and chill them for 15 minutes.
- Melt the milk chocolate chips with the shortening in a microwave-safe bowl, stirring every 20 seconds.
- Dip each truffle in the chocolate, sprinkle with reserved crumbs, and chill for 30 minutes.
