Ingredients

1 1/2 cups old fashioned oats
1/2 cup flour
1/2 cup brown sugar
1/4 tsp baking soda
1/4 tsp sea salt
1/2 tsp cinnamon
1/4 cup sliced almonds
1/4 cup unsweetened coconut flakes
1/2 cup coconut oil (optional)
1 2/3 cup raspberries
3 tbsp honey
2 tsp cornstarch
1/4 tsp almond extract

Steps

Heat the oven to 350 F and line an 8-inch square pan with parchment.
Cook the raspberries, honey, cornstarch, and almond extract in a small saucepan over medium heat for 5 minutes, stirring until thick.
Mix the oats, flour, brown sugar, baking soda, salt, cinnamon, almonds, coconut flakes, and melted coconut oil.
Press two-thirds of the oat mixture into the pan, spread the raspberry filling over it, and crumble the remaining mixture on top.
Bake for 30 minutes, then cool the bars in the pan for 15 minutes before cutting.
