Ingredients
- 7 oz maria cookies
- 10 tbsp unsalted butter
- 3 tbsp milk
- 3/4 cup evaporated milk
- 3/4 cup condensed milk
- 3 lg eggs
- 1 tbsp vanilla extract
- 4 oz full-fat cream cheese
- 4 oz queso fresco
Steps
- Heat the oven to 350 F and grease a 9-inch springform pan.
- Crush the maria cookies, mix them with 6 tablespoons melted butter and the milk, then press the mixture into the pan.
- Beat the evaporated milk, condensed milk, eggs, vanilla, cream cheese, queso fresco, and remaining melted butter until smooth.
- Pour the filling over the crust and bake for 45 minutes, until the center is set and reaches 160 F.
- Cool the cheesecake at room temperature for 1 hour, then cover and chill for 6 hours.
