Ingredients
- 1 spice cake mix
- 1/3 cup unsalted butter
- 1 can (15 oz) pumpkin puree
- 2 whole eggs
- 2 tsp pumpkin pie spice
- 1 package (8 oz) cream cheese
- 1/2 cup unsalted butter
- 3 3/4 cups powdered sugar
- 1 tsp vanilla extract
Steps
- Heat the oven to 350 F and line two baking sheets with parchment.
- Stir the cake mix, melted butter, pumpkin, eggs, and pumpkin pie spice into a thick batter.
- Drop 48 rounded spoonfuls onto the baking sheets, leaving space between them.
- Bake for 10 minutes, then cool the cake rounds for 5 minutes.
- Beat cream cheese, butter, powdered sugar, and vanilla until smooth.
- Spread the filling on half the cake rounds and top with the remaining rounds.
