Ingredients
- 2 cup + 1/2 c unbleached all-purpose flour
- 1 egg
- 1 cup pumpkin puree
- 1 pinch salt
- 1 pinch nutmeg
- 1 cup ricotta cheese
- 2 tsp tarragon
- 1/2 tsp salt
- 1 tsp salt
- extra virgin olive oil
- tarragon
Steps
- Mix 2 cups flour, the egg, a pinch of salt, and enough water to form a firm dough.
- Knead the dough for 8 minutes, cover it, and rest it for 20 minutes.
- Stir the pumpkin puree, ricotta, tarragon, nutmeg, and 1/2 teaspoon salt in a bowl.
- Roll the dough thin using the remaining flour, cut it into squares, and place filling on half the squares.
- Brush the edges with water, top with the remaining squares, and press firmly to seal.
- Boil the ravioli in salted water for 5 to 7 minutes, then drain and toss with olive oil and tarragon.
