Ingredients
- 1 1/2 cups whole milk
- 1 cup pumpkin puree
- 2 large eggs
- 6 tbsp unsalted butter
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup granulated sugar
- 1 tsp sea salt
- 1 1/2 tsp ground allspice
- 1 tbsp ground cinnamon
- 1 tsp ground ginger
- 4 tbsp salted butter (optional)
- maple syrup (optional)
Steps
- Melt 6 tablespoons butter and let it cool slightly.
- Whisk milk, pumpkin, eggs, vanilla, and melted butter in a large bowl.
- Stir flour, baking powder, baking soda, sugar, salt, allspice, cinnamon, and ginger into the wet mixture.
- Heat a large skillet over medium heat and lightly butter it.
- Pour about 1/4 cup batter for each pancake and cook for 2 to 3 minutes per side.
- Repeat with the remaining batter, buttering the skillet as needed.
