Ingredients

  • 2 large eggs
  • 2 tbsp butter
  • 2 tbsp pumpkin puree
  • 1/4 cup milk
  • 1/4 cup unbleached all-purpose flour
  • 1/2 tsp pumpkin pie spice
  • cinnamon and semisweet chocolate chips (optional)
  • powdered sugar (optional)

Steps

  1. Heat the oven to 425 F and place a 10-inch ovenproof skillet inside to heat.
  2. Whisk the eggs, milk, flour, pumpkin puree, and pumpkin pie spice until smooth.
  3. Carefully melt the butter in the hot skillet, then pour in the batter.
  4. Scatter chocolate chips and cinnamon over the batter, if using, and bake for 15 minutes until puffed and set.
  5. Dust with powdered sugar, if using, and serve immediately.
