- 2 tbsp vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp pumpkin pie spice
Steps
- Whisk the buttermilk, pumpkin puree, vegetable oil, eggs, and vanilla in a large bowl.
- Stir the flour, brown sugar, baking powder, baking soda, and pumpkin pie spice together in a second bowl.
- Fold the dry mixture into the wet mixture until just combined.
- Heat a lightly oiled griddle or large skillet to 350 F.
- Pour about 1/4 cup batter for each pancake and cook for 2 to 3 minutes per side until golden and cooked firm.
