Ingredients

  • 1/2 cup coconut oil
  • 1/2 cup dark brown sugar
  • 1 tsp vanilla extract
  • 6 tbsp pumpkin puree
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tbsp cocoa powder
  • 1 tsp ground cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/2 cup semi-sweet chocolate chips

Steps

  1. Heat the oven to 350 F and oil two baking sheets.
  2. Stir the coconut oil, brown sugar, vanilla, and pumpkin together in a large bowl.
  3. Mix in the flour, salt, baking powder, baking soda, cocoa, cinnamon, and pumpkin pie spice.
  4. Fold in the chocolate chips, then drop rounded spoonfuls onto the baking sheets.
  5. Bake for 10 to 12 minutes, until the cookie edges are set.
  6. Cool the cookies on the sheets for 5 minutes.
