- 2 cups unbleached all-purpose flour
- 1 tsp baking soda
- 3/4 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/8 tsp ground cloves
- 1 cup unsalted butter
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1 can (15 oz) pumpkin
- 2 large eggs
- 2 tsp vanilla extract
- 8 oz cream cheese
- 6 tbsp unsalted butter
- 3 cups powdered sugar
- 1 tsp vanilla extract
Steps
- Heat the oven to 350 F and grease a 15-by-10-inch baking pan.
- Whisk the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves in a bowl.
- Beat 1 cup butter, brown sugar, and granulated sugar until smooth, then beat in the pumpkin, eggs, and vanilla.
- Stir the dry mixture into the pumpkin mixture, spread the batter in the pan, and bake for 25 to 30 minutes.
- Cool the bars completely in the pan for about 105 minutes.
- Beat the cream cheese, 6 tablespoons butter, powdered sugar, and vanilla until smooth, then spread the frosting over the cooled bars.
