Ingredients
- 3/4 cups milk
- 3 large eggs
- 2 tbsp butter
- 1/2 tsp lemon extract
- 5/8 cups all-purpose flour
- 2 tbsp sugar
- 1 dash salt
- 1 cup heavy whipping cream
- 2 cups confectioners' sugar
- 1 package (8 oz) cream cheese
- 1 cup pistachio cream
- 1 tsp vanilla extract
- 2 cups sliced fresh strawberries
- optional: whipped cream
Steps
- Whisk the milk, eggs, melted butter, lemon extract, flour, sugar, and salt until smooth, then rest the batter for 10 minutes.
- Beat the heavy cream, confectioners' sugar, cream cheese, pistachio cream, and vanilla until thick and smooth.
- Heat a lightly buttered 8-inch skillet over medium heat, pour in a thin layer of batter, and cook each crepe for 1 minute per side.
- Spread the filling over each crepe and add sliced strawberries.
- Fold or roll the crepes and finish them with optional whipped cream.
