Ingredients
- 1 1/3 cup water
- 2/3 cup 100% cranberry juice concentrate
- 1/2 cup sugar
- 12 oz cranberries
- 3 tbsp unflavored gelatin
- 1/2 cup cold water
- 1 can (10 oz) crushed pineapples
- 3 cup red grapes
- 1 1/2 cup pecans
- 1 1/2 cup heavy whipping cream
- 1 pkg cream cheese
- 1/2 cup powdered sugar
- 1 cup mini marshmallows
Steps
- Sprinkle the gelatin over 1/2 cup cold water and let it stand for 5 minutes.
- Stir the hot 1 1/3 cups water, cranberry concentrate, sugar, and softened gelatin until dissolved.
- Fold in the cranberries, drained pineapple, grapes, and pecans.
- Pour the mixture into a 9-by-13-inch dish and chill for 60 minutes, until set.
- Beat the cream cheese and powdered sugar until smooth, then fold in the whipped heavy cream and marshmallows.
- Spread the topping over the set gelatin and chill for 20 minutes.
