Ingredients
- 1 butternut squash
- 5 tbsp salted butter
- 3 cloves garlic
- salt and freshly ground black pepper
- 1/2 cup plain panko bread crumbs
- 1/2 cup finely grated parmesan
- 1/2 tsp dried thyme
- 1/4 tsp dried sage
- 1/4 cup chopped fresh parsley
Steps
- Heat the oven to 375 F and butter a 9-by-13-inch baking dish.
- Peel, seed, and thinly slice the butternut squash.
- Melt the butter in a small pan, stir in the garlic, and cook for 1 minute.
- Layer the squash in the dish, seasoning each layer with salt, pepper, thyme, sage, and garlic butter.
- Cover the dish and bake for 35 minutes, until the squash is nearly tender.
- Mix the panko, Parmesan, and parsley, sprinkle the mixture over the squash, and bake uncovered for 15 minutes.
