- 2 1/4 cups rolled oats
- 1 3/4 cups all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger (optional)
- 1 cup unsalted butter
- 1/2 cup granulated sugar
- 1/3 cup light brown sugar
- 2 tbsp molasses
- 1 large egg
- 1 large egg yolk
- 1 tsp vanilla extract
- 8 tbsp unsalted butter
- 2 oz cream cheese
- 2 1/4 cups powdered sugar
- 1 tsp vanilla extract
Steps
- Heat the oven to 350 F and line two baking sheets with parchment.
- Whisk the oats, flour, baking soda, salt, cinnamon, nutmeg, and ginger in a bowl.
- Beat 1 cup butter with both sugars and molasses, then beat in the egg, yolk, and vanilla.
- Mix in the dry ingredients, scoop 30 portions onto the sheets, and bake for 10 to 12 minutes.
- Cool the cookies on the sheets for 5 minutes, then transfer them to a rack and cool completely.
- Beat the remaining butter, cream cheese, powdered sugar, and vanilla until smooth, then sandwich the cookies with the filling.
