- 1 cup unsweetened flaked coconut
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 3/4 tsp kosher salt
- 1 cup extra-virgin coconut oil
- 1/2 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 tsp vanilla extract
- 2 large eggs
- 2 cups old fashioned oats
- 1 tbsp finely grated lime zest
Steps
- Heat the oven to 350 F and line two baking sheets.
- Whisk the flour, baking soda, salt, and oats in a medium bowl.
- Stir the coconut oil, granulated sugar, brown sugar, vanilla, eggs, and lime zest in a large bowl.
- Stir the dry mixture into the wet mixture until just combined.
- Scoop the dough onto the baking sheets and bake for 10 to 12 minutes.
- Cool the cookies on the baking sheets for 5 minutes.
