Ingredients
- 1 tbsp flaxseed meal
- 3 tbsp room temperature water
- 1/4 cup coconut oil
- 1/2 cup coconut sugar
- 1 tsp vanilla extract
- 3/4 cup gluten-free oat flour
- 1/2 cup gluten-free rolled oats
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips
- fancy sea salt (optional)
Steps
- Stir the flaxseed meal and water together, then let them stand for 5 minutes.
- Heat the oven to 350 F and line a baking sheet.
- Mix the coconut oil, coconut sugar, vanilla, and flax mixture until smooth.
- Stir in the oat flour, rolled oats, coconut, baking soda, salt, and chocolate chips.
- Scoop 10 portions onto the sheet and bake for 10 minutes.
- Cool the cookies for 5 minutes before adding optional sea salt.
