Ingredients
- 1/4 cup unsalted butter
- 3/4 cup canned pumpkin puree
- 1/4 cup light brown sugar
- 1/4 cup granulated sugar
- 1/4 cup sour cream
- 1 large egg
- 1 tsp pure vanilla extract
- 3/4 cup plus 2 tbsp unbleached all purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp fine sea salt
- 1/2 cup mini semi-sweet chocolate chips
Steps
- Heat the oven to 350 F and place 24 liners in mini muffin pans.
- Melt the butter in a small pan over low heat for 2 minutes, then cool it briefly.
- Whisk the butter, pumpkin, sugars, sour cream, egg, and vanilla in a bowl for 5 minutes.
- Stir in the flour, cocoa powder, baking soda, baking powder, salt, and chocolate chips until just combined.
- Divide the batter among the cups and bake for 12 minutes, until the centers spring back.
- Cool the muffins in the pans for 13 minutes.
